The Art of Pairing Mexico in a Glass: When Wine Becomes Art

“Wine began to be part of my life as a complement to my career in hospitality and gastronomy, but it soon became the central axis of my professional career and the driving force of my personal life.”

Twenty-three years ago, I decided I wanted to change the history of my country and help people drink better and better. I have been able to witness and take part in an oenological revolution that transformed the wine landscape in Mexico, and today we are living through a magical moment in the availability of wine, both Mexican and from wine regions around the world, unlike anything we have seen before.

A wine revolution in Mexico. Mexico has increased its per-capita wine consumption from 200 to 1,200 milliliters in record time.

From the three states once recognized for wine production —Baja California, Coahuila, and Querétaro— today there are 17 states engaged in this agricultural and transformational craft.

Thirty-nine out of every 100 bottles consumed in Mexico are Mexican wine, and we feel proud and happy to talk about it, recommend it, give it as a gift, and give it a privileged place at our tables.

I am very proud to be part of a movement in which we have turned wine drinkers into more conscious consumers, a better-informed public, and more demanding buyers.

Every glass holds a story. I have always believed that every glass of wine holds a story, and that telling and conveying that story is an obligation of the profession, while knowing how to pair it with food is an art.

These are the fundamental concepts behind Grupo Xcaret's wine curation, which I have led for the past five years.

Xcaret represents a space where aesthetics are a constant, where harmony is natural beauty, and where architecture and interior design support and project that beauty.

The world of wine is precisely that: elegance without artifice, an aesthetic of taste, a sip that explores your senses, a pairing that becomes unforgettable.

Mexico as the starting point. My creative process begins with Mexico as a country. Xcaret's profound love and reason for being is the beauty of Mexico elevated to the sublime.

The art of cuisine, the art of music, the art of Mexican materials supporting the structures, wood carving, textiles and weaving, sculpture, painting —sophisticated Mexico is present at every step.

Wine is art as well.

Giving vineyards a voice. Mexican wineries are part of Mexico's business landscape and also part of the world of art. We want to give visibility to vineyards we may know little about but that deserve a voice. We want to showcase magnificent small-production wines that need to be seen and experienced. We want to honor longtime producers who have made history, those pioneers who marked the route so others could follow with confidence on a path already cleared.

We want to celebrate chefs' creations by elevating them through the sips created by winegrowers and winemakers from Mexico and around the world who labor under the sun each harvest season.
