At Xcaret, we dreamed of creating a gathering capable of celebrating the diversity of flavor as a cultural, artistic, and human territory. That is how Apapaxoa GastroCultural Festival was born: as an invitation to pause, to look at cuisine through different eyes, to savor with all our senses awake and, above all, to bring together in one place the memory and the future of our gastronomy.

Bringing together the Xcaret Gastronomic Collective and international chefs with traditional cooks, contemporary proposals with age-old knowledge, is no coincidence. It is a deliberate gesture of dialogue, listening, and respectful exchange. Because we are convinced that the greatest encounters happen when stories are told around the fire and flavors are shared honestly.

But Apapaxoa does not live only in the kitchen: it expands into music, words, design, literature, and visual creation. This festival is also a space for opening the senses and the mind, with exhibitions, workshops, intimate concerts, readings, and conversations among chefs, writers, sommeliers, artists, and thinkers who enrich the experience through different languages. Because flavor can also be sung, written, imagined, and inhabited.

At Apapaxoa, we do more than cook: we weave community. We spark conversations that transcend the table and become ideas, projects, and new ways of understanding what it means to nourish and to be nourished.

To think about flavor is also to think about the future. That is why sustainability is a seed present in every gesture of the festival: from respecting the origin of ingredients to caring for the environment and honoring the work of those who make cuisine possible. We honor the land that feeds us and believe in conscious gastronomy that balances enjoyment with responsibility and delight with care.

We believe in gastronomy that honors its origins, values those who work the land, celebrates creativity, and places the collective experience at its center. That is why this festival is also a declaration: we want to keep telling our stories through flavor. We want the palate to unite us, inspire us, and move us.
